Guangzhou Clay Pot Rice, or Bao Zai Fan, is a highly representative and traditional Cantonese one-pot meal, especially popular during the autumn and winter seasons. Its signature feature is the use of a small clay pot (“Bao Zai”) in which the rice and ingredients are cooked together. The method involves first cooking the rice in the pot, and just before the water is fully absorbed, various marinated toppings—such as the classic Lap Cheong (Chinese sausage), Lap Yuk (cured pork belly), “slider” chicken, black bean spareribs, or beef with a cracked egg—are placed on top. Oil is then drizzled around the inner edge of the pot, and it is slow-baked over a low flame. This process serves to steam the toppings while simultaneously creating the dish’s most prized element: a layer of golden, crispy, scorched rice at the bottom, known as fàn jiāo. Before eating, diners drizzle a special sweet soy sauce over the top and mix the ingredients, fluffy rice, and crispy bits together. Bao Zai Fan combines the fragrance of the rice, the savoriness of the meat, and the smoky aroma of the scorched crust, making it a deeply flavorful and beloved comfort food found in street-side eateries and restaurants throughout Guangzhou.

Guangzhou’s Baqi Er Malu (八旗二马路, literally “Eight Banners Second Road”) is a historically significant street located in the Yuexiu District of Guangzhou, running roughly east-west between Yicui Road and Beijing South Road. The road’s name dates back to the Qing Dynasty and is based on its geographical position: the nearby area (around modern-day Yanjiang Middle Road) was the site of the Manchu Eight Banners naval garrison and the “Baqi Guild Hall.” The main thoroughfare facing the Pearl River was known as “Baqi Da Malu” (Eight Banners Great Road, i.e., “Baqi First Road”), and “Baqi Er Malu” was simply the second parallel road to its north. Over time, as the city developed, the original “Baqi Da Malu” was renamed and eventually became part of Yanjiang Middle Road. Miraculously, the name “Baqi Er Malu” was retained and is still in use today, serving as a living testament to Guangzhou’s historical changes and now existing as a typical old-city residential street, notably home to the Baqi Er Malu Primary School.

“Jiangwan” in Guangzhou is not a traditional administrative district or historical neighborhood, but rather a general term referring to the area centered around the “Jiangwan Bridge” (江湾大桥), straddling both banks of the Pearl River. The name literally means “River Bend.” This area spans Yuexiu District and Haizhu District and is a key location in downtown Guangzhou. The central landmark, Jiangwan Bridge, opened in January 1998 and is one of the main arterial bridges of the Guangzhou Inner Ring Road, significantly connecting Yuexiu District on the north bank (near Dashatou and Dongshan) with Haizhu District on the south bank (near Fangzhi Road and the Sun Yat-sen Marshal’s Mansion). Therefore, “Guangzhou Jiangwan” typically evokes the riverside scenery on both sides of the bridge, modern residential developments (like Tianhui Jiangwan), the Dashatou Wharf (a major pier for Pearl River night cruises) on the north, and The Memorial Museum of Generalissimo Sun Yat-sen’s Mansion on the south.
